Banana & Chocolate Bread
makes 1
1 2/3cups (200 gr) brown rice flour
2/3 cup (120 gr) coconut sugar
2 tsp ground cinnamon
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 bananas – ripe
½ cup (120 ml) plant based milk
2 tbsp vegan sour cream
¾ cup (130 gr) dark chocolate chips
Preheat the oven to 380 F / 190 C.
Coat a loaf pan with non-stick cooking spray. Set aside.
Combine flour, sugar, cinnamon, baking powder, baking soda and salt in a large mixing bowl. Mash the bananas in a separate bowl.
Stir in the milk and sour cream.
Fold into the dry ingredient mix until just combined.
Gently stir in the chocolate chips – do not overmix.
Transfer the batter into the prepared pan. Top with slices of banana.
Bake in the preheated oven for 50 minutes or until a knife inserted in the middle comes out clean.
