Oat and Berry
serves 2
½ cup (45 gr) old-fashioned oats
½ cup (120 gr) almond milk
½ cup (120 gr) water
salt
coconut smoothie:
1 large banana
1/3 cup (80 gr) canned coconut cream – unsweetened
Place the coconut cream in the freezer for 20 minutes.
Combine oats, almond milk and water in a pot over medium to low heat.
Add a pinch of salt.
Bring to a simmer. Cook for 5 minutes. Remove from the heat and set aside.
To make the smoothie: combine cold coconut cream, banana, pitted date and vanilla powder in a blender. Blend until smooth – 2 minutes or less.
To serve, drop 1 tbsp berry jam in each serving bowl.
Top with warm oats and cold coconut smoothie.
Garnish with fresh berries, a drizzle of peanut butter and black sesame seeds.
