Lemon Pasta
+ burrata cheese
serves 4
1 lbs. (454 gr) linguini pasta
lemon oil or olive oil
1 lime
3 garlic cloves – thinly sliced
1 bundle of fresh spinach - washed and dried
1 cup (150 gr) frozen green peas
burrata cheese – 1 ball
salt + pepper
+ parmesan shavings
Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
Drain reserving ¼ cup of the pasta water.
Mix 1 tbsp lemon oil, the juice and zest of the lime in a bowl. Set aside.
Heat the oil in a large pan over medium heat and fry the garlic – 2 minutes.
Add the spinach, cooked pasta, green peas and lemon mixture. Toss to coat – 1 minute.
Add some of the reserved pasta water if needed. Season to taste.
Divide among 4 serving plates. Tear the burrata cheese and sprinkle over the pasta.
Top with parmesan cheese and a drizzle of lemon oil.
