Vegan Fudge
2 cups (150 gr) coconut flakes
1⁄2 cup (125 gr) peanut butter - See recipe here
3 tbsp unsweetened cocoa powder
3 tbsp whole dates - pitted
⅓ cup (107 gr) maple syrup
+ cocoa nibs
+ pearl syrup
+ more peanut butter
Line a small rimmed baking sheet with parchment paper.
Place the coconut flakes in the bowl of a food processor.
Blend until it becomes a paste - about 4 minutes.
Add the peanut butter, cocoa powder, dates and maple syrup.
Pulse for 10 seconds.
Spread in the prepared baking dish. Drizzle with more peanut butter and top with cocoa nibs and pearl sugar.
Keep in the freezer until needed - allow a few minutes to thaw before eating!
