Peanut Butter Cookies

Peanut Butter Cookies

1 cup (130 gr) all-purpose flour
½ tsp baking soda
½ tsp baking powder
½ tsp salt
 cup (150 gr) butter - softened
1⁄2 cup (110 gr) granulated sugar
1 egg - cage-free
1 tsp vanilla extract
3⁄4 cup (180 gr) peanut butter – See recipe here
 cup (100 gr) dark chocolate chips


Preheat the oven to 375 F / 190 C. Line a baking sheet with parchment paper.

Combine flour, baking soda, baking powder and salt in a large bowl.

Place the butter and sugar in the bowl of a stand mixer.

Beat until pale and creamy at a moderate speed – 4 minutes.

Add the egg and vanilla extract on low speed. Mix until just incorporated.

Stir in the peanut butter, flour mixture and chocolate chips.

Keep mixing on medium speed until incorporated.

Drop spoonfuls of the batter on the prepared baking sheet.

Bake in the preheated oven for 15 minutes or until golden brown.

Let cool completely before removing.
